Recipe of the Month - How to cook Intwood Farm Meatballs in Italian Sauce

Either make your own Sauce (see method below) OR use a packet of Atkins and Potts Tomato and Basil Sauce and add 125ml of water.

  1. Thoroughly defrost meatballs and bring to room temperature before cooking.
  2. Mix the sauce and the water in the pan and bring up to the boil and gently lower in the meatballs leaving gaps between them   DO NOT STIR
  3. Reduce heat to a simmer and simmer for 15 minutes – once the meatballs change colour you can then stir the sauce.
  4. Prepare the pasta as on the packet.  Use large round pasta tubes which take 12 minutes to cook.
  5. Serve the meatballs over the pasta and top with finely grated parmesan cheese (if you don’t have parmesan, cheddar is good or leave it naked).          

Recipe for home made Tomato Sauce

Enough for one packet meatballs which is two hearty portions!
 
1 Tblsp Olive Oil
1 Medium Onion, peeled and diced
2 Fat Cloves garlic, peeled and finely chopped
1 Tblsp Tomato Puree
1 Can Tomatoes (preferably chopped)
100ml Water
Salt and Pepper
½ Tsp Dried Oregano
100ml Milk
¼ to ½ Tsp Sugar
Grated parmesan to serve
 
Method

  1. Choose a pan large enough to take the meatballs in a single layer.
  2. Gently fry the onion and garlic in the oil until softening but not coloured.
  3. Add to the pan the tomatoes, water, seasoning, dried oregano and tomato puree.
  4. Bring to the boil whilst stirring, then reduce to a simmer and place on the lid.  Stir occasionally for 20 minutes until the onions are really soft.
  5. Add the milk (it will look curdled for a while but don’t panic all will be well).  At this point taste the sauce adding a little sugar to ‘round off’ the flavour.
